Coffee Production
Our coffee trees begin to flower in May and with the help of our bee pollinators, produce small green fruit which will ripen into bright red fruit called coffee cherry.
 

 
The bunches of bright white flowers are called "Kona Snow."
 
 
 
 
The coffee cherries which ripen, becoming bright red, are now ready to be picked by hand.  This hand picking occurs each year from about August to as late as February
 
 
 
Each cherry contains two coffee beans covered in a thick mucilage which must be removed before the beans can be air dried.

 
 
 
After drying the beans, now called parchment, they are stored in a low humidity environment for the aging process.  This aging improves the flavor of the beans bringing out a very mellow, low acid coffee product.
 
 
 
 
The parchment goes through a milling process which removes the thin parchment layer to produce green beans that are now ready for the roasting process.
 

 
 
The coffee is roasted just before it is shipped to you.  Our coffee is roasted to a medium/dark (Full City +) level which brings out a rich regional flavor. Keopu Mill Coffee is now ready for you to enjoy!
 
 
It's coffee cherry picking time and this years crop is looking very good. We selectively pick our cherry about every 3 weeks from now to late January!
